When I first started Spiceology our main ethos was to bring unique flavors to everyday cooking. We invented some groundbreaking blends over the years that pushed the boundaries. Not all spice blends need to have exotic ingredients to be spectacular and this Za’atar spice blend recipe was always one of my favorites for its simplicity (only 4 spices plus salt & pepper).
Tangy sumac and earthy cumin really drive the flavor with herbaceous hints of thyme and nutty toasted sesame seeds add texture and visual appeal.
Za’atar is aromatic, flavorful and pairs well with chicken or beef, sprinkled on vegetables, or mix it with olive oil and use it as a bread dipping sauce. I’ve been dreaming of using it to make a loaf of rustic bread with shredded butter – like a za’atar croissant bread. I definitely think I should make that immediately.
Heather’s Notes
- Make sure you’re using fresh spices. Spices begin to lose their flavor after grinding (just like coffee), so check expiration dates.
- Thyme vs Oregano – either herb works great, or do half and half.
- For optimal flavor toast cumin seeds and grind in a coffee or spice grinder before adding to the blend.
- It keeps well for months when stored properly, making it a convenient addition to your spice and seasonings rack.

How to Make Za’atar Spice Rub

- Blend evenly: Stir or shake in a jar until all spices are evenly distributed.
- Taste and adjust: Sample a pinch of your blend. Add more sumac for tang, sesame seeds for nuttiness, or thyme for herbal notes.
- Store: Transfer to an airtight spice jar or sealed container and keep it in a cool, dark place.
