Grilled Nashville Hot Chicken Skewers

I came up with a Nashville Hot Chicken seasoning many years ago while helping Williams-Sonoma with spice blend development. They ended up not stocking it for long, so we used it under the Spiceology brand and it’s been a top seller ever since! I’ve tweaked the recipe below so it’s easier for a home consumer to make it with spices you likely have in your pantry.
This recipe for Grilled Nashville Hot Chicken Skewers is the perfect weeknight dinner and only has 8 ingredients and comes together really fast. I like to use a grill pan for indoor grilling during the winter months, but you could also make them on a gas or charcoal grill, or even in the air fryer!
Make sure you make extra of this spice blend so you’ll always have it on hand whenever you’re craving a sweet and spicy chicken. This classic chicken spice rub is another favorite of mine that I always have in my spice cabinet. Enjoy!
How to Make Grilled Nashville Hot Chicken Skewers
This simple weeknight dinner recipe is on the table in 30 minutes or less. Loaded with warm spices, juicy chicken thighs, and brushed with sweet fragrant honey. Don’t forget to serve it with pickles and a slice or two of white bread for a more authentic Nashville experience.
This version uses boneless skinless chicken thighs, but you can also use cubed chicken breast if you’re a white meat fan.

Cube boneless skinless chicken thighs and thread onto skewers.
Season liberally with Nashville Hot Chicken spice blend and grill over a hot grill pan.
In my house, we call this $8000 chicken because my dog swallowed a whole skewer right after the final photos and earned an emergency vet trip. She just turned 13 and is still going strong – and yes, the skewerectomy was a success.

Grilled Nashville Hot Chicken Skewers

Ingredients
- 1 lb chicken thighs, boneless skinless or breast, cubed
- 2 tbsp Nashville Hot Chicken spice blend, recipe below
- 1 tbsp olive oil, or cooking spray
- 3 tbsp honey
Nashville Hot Chicken Spice Blend
- ¼ cup cayenne pepper
- 2 tbsp garlic powder
- 2 tbsp light brown sugar, packed
- 1 tbsp smoked paprika
- 1 tbsp kosher salt
- 2 tsp black pepper
Instructions
- Slice the chicken into uniform cubes or slices and thread onto metal skewers. NOTE: if using bamboo or wood skewers, soak for 20-30 minutes in water so they don't catch fire.
- Preheat grill pan over high heat.
- Season the chicken with Nashville Hot seasoning.
- Brush the grill pan with oil or use cooking spray and add the chicken skewers. Grill, flipping occasionally, until cooked through and center is no longer pink, about 8-10 minutes.
- Brush with honey and serve immediately with a side of pickles.
