Slice the chicken into uniform cubes or slices and thread onto metal skewers.
NOTE: if using bamboo or wood skewers, soak for 20-30 minutes in water so they don't catch fire.
Preheat grill pan over high heat.
Season the chicken with Nashville Hot seasoning.
Brush the grill pan with oil or use cooking spray and add the chicken skewers. Grill, flipping occasionally, until cooked through and center is no longer pink, about 8-10 minutes.
Brush with honey and serve immediately with a side of pickles and white bread, if desired.

Tips for Storing
Leftover chicken skewers keep well in an airtight container in the refrigerator for up to 3 days.
Remove the chicken from the skewers before storing; it takes up less space and reheats more evenly.
Reheat in a skillet over medium heat with a splash of water or chicken broth to keep the meat moist. The microwave works in a pinch but can make the chicken rubbery.
The spice blend can be made ahead and stored in a sealed jar at room temperature for up to 6 months. Keeping it on hand means this dinner comes together even faster on busy nights.
Freeze cooked chicken (off the skewers) in a zip-top bag for up to 2 months. Thaw overnight in the refrigerator before reheating.
