Sweet Green Tea & Ginger Mojito with fresh mint. A delicious summer cocktail or mocktail recipe with fresh brewed tea, fresh ginger, and a touch of rum.
Having a trusty thirst quencher on hand when the summer days get warm is essential. For the afternoon it’s a tall glass of sun tea & a splash of lemonade, but as the day turns to evening, I like kicking up the kid-friendly tea to an adults-only sipper by adding in a little rum and fresh mint. A mojito made easy! This recipe is so easy to make and can be kept in the fridge for a few days, if it lasts that long! We’ve been making them every night – for testing purposes, of course. 🙂
My neighbor popped over and I made her (ok, not really “made”) take a sip and she hasn’t stopped talking about it since. Imagine sweet refreshing tea with hints of fresh ginger, mint and rum. It’s cold, crisp and delicious. Did I mention it’s skinny? The simple syrup is made using Truvia Baking Blend which has 75% less calories than white sugar. I’m a huge fan of stevia and that’s exactly what Truvia is made from. So skip the guilt and pour yourself a tall frosty glass of this green tea and ginger mojito on the next warm summer day.
Sweet Green Tea & Ginger Mojito
Ingredients
- 3 cups water
- 3 green tea bags
- 2 inch piece of ginger peeled and sliced
- ½ cup Truvia Baking Blend
- ½ cup water
- fresh mint
- 1 oz rum optional
Instructions
- In a small saucepan, bring 3 cups of water to a simmer. Turn off the heat and add the tea bags and ginger. Allow to steep for 20-30 minutes, covered. Remove tea bags and ginger and pour the tea into a small pitcher. Cover and refrigerate.
- In a small saucepan, add the Truvia Baking Blend and 1/2 cup water. Bring to a simmer over medium heat until the sugar is dissolved and the liquid is clear. Do not boil. Remove from heat and allow to cool slightly. Pour into a small pitcher or glass jar. Cover and refrigerate.
- When ready to assemble, fill a glass with ice. Add a jigger of rum, 1-2 tablespoons Truvia simple syrup, fresh mint and fill glass with green tea. Stir and enjoy.
