It’s SRC time!! That’s Secret Recipe Club. If you’ve never heard of it before, it’s where a bunch of food bloggers get a random blog to make any recipe we like. It’s a load of fun and I look forward to it each month.
I was notified that my secret blogger was none other than the uber talented Carrie from Bakeaholic Mama. Not only do I love her to bits, but she has some pretty amazing deliciousness going on in her section of the food blogosphere. You owe it to your eyeballs (and stomach) to pay her a visit.
Choosing one recipe was tough!! I mean, really tough! But, being as it’s hot and I am refraining from turning on the oven at all costs, I went with a nice icy cold cocktail. I started by heading to the garden to fresh pick some berries and thyme. Then I called my hand model, aka darling daughter, then snapped a pic of the sweet red orbs before I pulverized them with my muddler. This is a nice quick cocktail to make and if you love gin, you’d better make sure you pick some extra berries. It’s slurpy deliciousness. Remind me to give you a recipe for homemade gin. No still necessary – it’s incredibly easy to do and quite tasty! Ok, back to the Tom Collins.

Thyme & Mixed Berry Tom Collins
A quick and refreshing cocktail that will have your guests raising their glasses for another. Adapted from Bakeaholic Mama’s recipe for Raspberry Thyme Tom Collins
1 teaspoon sugar
1 teaspoon water
1 teaspoon key lime juice
1/4 cup fresh raspberries
1/4 cup fresh strawberries, hulled
3 sprigs Thyme, leaves only.
2 shots Gin
- In a small saucepan, combine the sugar, water and lime juice and heat over medium-low flame, just until the sugar is dissolved. Remove from heat and allow to cool slightly.
- In a martini shaker add the raspberries, strawberries and thyme leaves, reserving 2 raspberries for garnish. Use a muddler or wooden spoon handle and crush the fruit and thyme. Fill shaker 2/3 full with ice and add the gin. Put the top on and shake shake shake. Strain into 2 glasses and top with tonic water. Garnish with a raspberry and Cheers!
Makes 2 cocktails.
