- ⅓ cup brown sugar, light or dark
- 2 eggs
- 1 ½ cups all purpose flour

- 1 cup mashed banana, about 3
- 1 banana, split lengthwise, optional
- ½ sour cream
- 1 tsp vanilla extract

- Preheat oven to 350ºF. Butter or grease a 9x5x3 loaf pan. Set aside.
- Cream butter and sugars together until fluffy. Add eggs and beat well.
- Sift dry ingredients together and add to butter mixture, just until combined. Add mashed banana, sour cream, and vanilla. Mix to combine.
- Pour into prepared pan and top with split banana. Bake 1 hour and 10 minutes, or until a cake tester inserted in the center comes out clean. Cool before cutting.
