I’m always looking for the perfect summer side dish with in-season ingredients. While I’m typically happy just eat whatever I can throw together I sometimes crave just something a little different. This easy chopped tomato avocado corn salad is packed full of fresh vegetables and gets a burst of flavor with a squeeze of fresh lime juice and lots of chopped cilantro. This simple salad has some Tex-mex flavors going on that pair perfectly with grilled fish, chicken, or pork tenderloin.
Now, if you’re not a fan of cilantro you could take this corn tomato avocado salad in another direction by throwing in basil instead of the cilantro and subbing lemon for the lime juice. See how easy this salad side dish is to make?
Ingredients you’ll need
- Cherry Tomatoes or Grape Tomatoes
- Raw Corn
- Avocado
- English Cucumber
- Fresh Cilantro
- Lime Juice
How to Make
In a big bowl add halved cherry tomatoes, sweet corn kernels, diced creamy avocado, English cucumber slices, minced cilantro, olive oil, fresh squeezed lime juice, salt and black pepper, and mix to combine. Give it a taste and add more lime juice, Kosher salt or black pepper, if desired. Serve right away for the best flavor but it will be just as delicious the next day.

- Grill Corn: If you want a variation of this recipe with a little more charred flare, try making it with grilled corn. It only takes about 10 minutes to get a good char on the sweet summer corn.
- Citrus: adding lime zest or lemon zest with add a brightness to this dish.
- Onion: add chopped red onion or green onion for even more flavor.

- 1-1/2 cups halved cherry tomatoes
- 1 cup fresh steamed sweet corn kernels
- 1 avocado - diced
- ½ English cucumber - half moon slices
- 3 tablespoons minced cilantro
- 2 tablespoon olive oil
- 1 tablespoon fresh lime juice
- Kosher salt and black pepper - to taste
