Wow – I just got home yesterday afternoon from yet another amazing “glampin” weekend in my 1947 Main-Line Silver Lark travel trailer at Riverside State Park.  Yes, it rained on Thursday but one of the girls said “Do you have any gum?”  Thanks Dottie!  You saved the day with that sentence!  Anyway, every year we all get together to camp for The Farm Chicks Show weekend and every year it seems to get better.  There were 20+ girls, tons of super cutesyfied trailers and lots of laughs.  Did I mention the wine was flowing?  Oh yes, it sure was.

This is all of us during Wine 101 hosted by my sweet friend Julie F.  She’s a wine rep from Oregon and made the trip up in a hurry on Friday so she could educate us girls on what wine is all about.  Her lovely assistant is Faye who dressed up as Vanna White for the occasion.  She was one hot mama!  I know you’re asking yourself right now “what does one do after a wine class”?

Right?

Have a Petticoat Potluck- of course!  :)  Yes, it’s true.  A Petticoat Potluck.  Unfortunately, yours truly did not partake with layers of tuile-y goodness.  My petticoat was at the cleaners :wink:.  Ok, I’m just a big bump on a log.  Next year, if we have Petticoat Potluck Part Deux, then I will most likely do it.  (notice the hidden “out”)

As “Glampers” we don’t just toss the potluck goodies on a plastic table cloth, we do it up right with linens and buckets of fresh flowers…many thanks to Juli T. for that.  You made one heck of a gorgeous tablescape!

That’s the Spokane River behind the table.  Camping next to the river is just magical.  Even if it was booking by at 20+ miles per hour.  It’s still great to watch the Osprey search for goodies to feed their young, who were in a nest just across the river from us.  I watched this Osprey sit in the tree for quite some time on Saturday.  Amazingly beautiful birds.

Saturday I just sat by the river.  All.  Day.  Long.  It was heaven!  For the past 2 years I have been “Julie Cruise Director” for the Farm Chicks glampin weekend, so this year I got smart and printed out a map.  It had a list of antique stores, thrift stores and even the grocery store.  Whenever anyone asked me “how do I get….” I just handed them the map.  It was utter bliss!

This was my view from a nice comfy chair on Saturday.  Not too shabby if I do say so myself!

This is my trailer in the foreground.  It’s old, it’s crusty, it’s filled with red and white toile and I love it.  I have my little table and chairs for eating breakfast in the morning and my big red Schwinn bike for those times when the bathroom seems eons away and you just need to get there quick.  We affectionately named it the “Potty Express” for the weekend and it was used by many girls.  :)

This is my dear friend Gracie’s trailer.  So stinkin cute!  You should see the smiles this trailer evokes when we’re caravaning down the road.

Now, who loves some food cooked over the campfire?  ::raising my hand::  I made this Corn and Cheese Casserole for the Petticoat Potluck and it was a smash hit.  Super easy and super delish!  Make sure you make this on your next camping excursion and you will be the pride of your campsite.  Promise!
Dutch Oven Corn Casserole

An easy campfire corn casserole that will please your hungry glampers! Or campers. Either way, toss it together and throw it in the fire for a delicious addition to dinner.

Ingredients

  • 2 boxes Jiffy brand cornbread mix
  • 2 15 oz cans creamed corn
  • 2 15 oz cans whole kernel corn, drained
  • 2 large eggs
  • 2 cups grated mixed cheeses (taco blend), divided
  • 1/4 cup butter (1/2 stick), melted or cut into small chunks

Instructions

  1. Start 23 self-lighting briquettes in the fire pit. Let them go for 20 minutes while you go make the casserole.
  2. Grease the inside of your dutch oven and the underside of the lid with vegetable oil and set aside.
  3. In a large bowl mix together all ingredients except for 1/2 cup of the cheese. Stir to combine well and pour into the greased dutch oven. Place the lid on.
  4. Put 16 of the hot briquettes on the top of the dutch oven. Put remaining 7 in a circle and place the dutch oven over the top of them. Cook for 1 hour, rotating the dutch oven pot AND lid every 15 minutes. A large stick comes in handy for this portion. In the last 15 minutes, add the remaining 1/2 cup of cheese to the top of the casserole and put the lid back on. Remove the lid and the pot from the fire and enjoy.
