Zesty Peach Salsa

Tonight I am doing my first ever cooking demonstration.  Well, the first in front of people I don’t know.  Anyway, I’m whipping up Zesty Peach Salsa with fresh peaches from Yaryan’s Orchard in Green Bluff, WA.  They were so sweet and delicious.  What?  I had to give them a taste.  🙂  As I always tell my kids, “I have to make sure it’s not poisonous”.  Those words usually come out of my mouth as I’m passing them a Frappacino with Whipped Cream.  Yes, I’m that Mom.

Back to the recip – it’s super quick, super tasty and if you’ve never made a savory salsa with fruit before, you’ll be hooked!  This recipe is easily adapted by substituting watermelon, plums and even cherries (see recipe link below).  Give it a try!

Zesty Peach Salsa

Ingredients
4 whole peaches, skinned and diced
2 small shallots, minced
2 jalapenos, minced
2 garlic cloves, minced
1/2 bunch cilantro, coarsely chopped
1 lime, juiced
salt to taste

Instructions
1 Add all ingredients into a medium bowl and mix to combine.  Salsa can be served right away or cover with plastic wrap and refrigerate for 2-3 hours or overnight for depth of flavor.

Note: This salsa recipe can also be canned for your enjoyment after peaches are no longer in season
