Preheat oven to 350ºF. Line rimmed baking sheets with parchment paper. Set aside.
Using a stand mixer with paddle attachment or electric mixer, cream the butter, dark brown sugar, and granulatedsugar together until fluffy, about 5 minutes.
Add the pumpkinpuree, pumpkinpiespice, vanillabeanpaste, and koshersalt. Mix until combined.
Add the rolled oats, all-purpose flour, and baking soda to the butter mixture. Mix just until combined. Fold in chocolate chips.
Use a hinged scoop or large spoon to scoop onto prepared baking sheet. Leave about 2-inches between each cookie.
Bake 14-16 minutes until golden and cooked through. Remove to a wire cooling rack. Cool completely before icing.
Vanilla Icing
In a small bowl, mix together confectioners sugar, milk, and vanilla extract until smooth. Use a spoon or fork to drizzle the icing over the cookies.
Notes
*Key tip: Blot the pumpkin puree on paper towels for 10 minutes to keep cookies chewy, not cakey.**Ingredient note: Use old-fashioned rolled oats and plain pumpkin puree, not pie filling. A good-quality pumpkin pie spice blend like Spiceology’s can stand in for the individual spices.***Substitution: White chocolate or butterscotch chips work in place of semi-sweet. See the post for more swaps.****Storage: Airtight at room temperature up to 4 days, fridge up to 1 week, freeze un-iced cookies up to 3 months.
