Pear & Vanilla Bean Honey
A simple small batch Pear & Vanilla Bean Honey that can be spread of toast or drizzled over ice cream.

- 3 ripe pears quartered
- ½ cup water
- 1 cup white sugar
- 1 vanilla bean split and seeds scraped
- 1 tablespoon lemon juice

In a medium sized pot, add the pears and water. Bring to a boil and then turn down and simmer for 15 minutes, or until the pears are very soft.
Pass the pears and cooking liquid through a food mill. Add to a clean pot along with the sugar, vanilla bean seeds and pod, and lemon juice.
Bring to a boil and cook, stirring occasionally, for 20-25 minutes, or until the mixture begins to get a golden honey color.
Remove from the heat and let cool, stirring occasionally. Refrigerate in 2 - 1/2 pint jars or in 1 pint jar.
