Garlic & Rosemary Mashed Red Potatoes

A rustic mashed red potato recipe that is kicked up with garlic confit and rosemary.

Ingredients

  • 3 lbs red potatoes cleaned and cubed
  • 3 tbsp butter
  • cup heavy cream
  • 1 tbsp Rosemary Dijon Spice Blend or 3 tbsp dijon mustard and 2 tsp minced fresh rosemary
  • 3 tbsp minced garlic confit or fresh garlic, if preferred
  • 1 tbsp fresh rosemary chopped
  • kosher salt to taste
  • black pepper to taste

Instructions

  • Bring a large stock pot of water to a boil. Salt and add the potatoes. Boil until fork tender, about 15 minutes. Drain.
  • Add the potatoes, butter, cream, spices, garlic, and rosemary to a large bowl and mash with a potato masher making sure to incorporate all of the ingredients. Add more cream if desired. Season with salt and pepper and serve immediately.
