Spring Salad with Strawberries, Bacon & Blue Cheese

Spring Salad with Strawberries, Bacon & Blue Cheese is not only delicious, but is equally beautiful. With ripe red strawberries, crisp bacon, tangy blue cheese, and creamy boiled eggs on top of a bed of spring greens and enrobed in a tart vinaigrette. This salad screams YUM!

Ingredients

  • 2 tbsp honey
  • ¾ cup olive oil
  • ¼ cup balsamic vinegar
  • 1 pinch paprika
  • 1 tsp garlic finely minced
  • ¼ tsp black pepper freshly ground
  • ¼ tsp kosher salt
  • ¼ tsp Worcestershire sauce
  • tsp dry yellow mustard
  • 3 tbsp minced red onion
  • 10 oz spring lettuce mix
  • 1 qt strawberries cleaned, hulled and sliced
  • 2 large hard-boiled eggs chopped
  • ¼ cup slivered almonds
  • ¼ cup crumbled blue cheese
  • ¼ cup cooked bacon fully cooked/browned and then chopped/crumbled

Instructions

  • With a mason jar, shake together the honey, olive oil, balsamic vinegar, garlic, paprika, Worcestershire sauce; dry mustard, salt, pepper, and red onion. Blend well until smooth.
  • In a large bowl, combine the spinach, strawberries, chopped eggs, almonds, crumbled cheese, and bacon.
  • Pour vinaigrette over salad, and toss.
