Chewy Chocolate Chip Granola Bars

These homemade chewy chocolate chip granola bars are made with oats, honey, and crispy rice cereal. Easy to make, kid-approved, and better than any box.

Ingredients

  • 2 cups crispy rice cereal
  • 2 ½ cups quick cooking oats
  • cup honey
  • ¼ cup light brown sugar
  • 5 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 3 tbsp miniature chocolate chips

Instructions

  • Preheat oven to 200ºF. Spray a 9x13 inch pan with cooking spray and set aside.
  • In a large bowl add the crispy rice and oats and mix to combine. Set aside.
  • In a small saucepan add the honey, brown sugar and butter and bring to a simmer. Heat for 3 minutes until it becomes syrupy and remove from heat. Add the vanilla and stir to combine.
  • Pour the butter mixture over the rice and oat mixture. Stir well to coat and pour into the prepared baking pan. Lay a piece of parchment paper over the pan and press the granola mixture down. Sprinkle with the chocolate chips and press down again.
  • Bake at 200 for 25 minutes. Turn off the heat and allow to remain in the oven for 2 hours.
  • Invert onto a cutting board and cut into bars. Store in an airtight container for up to a week.

  • Refrigerator: They keep well in the fridge for up to two weeks and get a little firmer, which some people prefer for a cleaner bite.
  • Freezer: Yes, these freeze beautifully. Wrap individual bars in plastic wrap, place in a zip-top bag, and freeze for up to 3 months. Thaw at room temp for about 20 minutes.
  • Individually wrap for lunchboxes. Wrapping each bar in plastic wrap or parchment makes them grab-and-go ready and keeps them from sticking to each other in a bag.
  • Avoid humidity. Humidity is the enemy of chewy granola bars. Store in a dry spot and keep the container sealed tight to maintain texture.
