Make broccoli beef with water chestnuts at home in 30 minutes. This easy stir fry uses tender flank steak, crisp broccoli, and a sweet and spicy sauce.
Slice flank steak against the grain into thin slices. Place in a bowl.
In a small bowl, mix the sherry, brown sugar, cornstarch, Sriracha and ginger together with a whisk.
Pour marinade over the sliced steak and stir to coat well. Set aside.
Heat a large skillet or wok over high heat until very hot. Carefully add peanut oil. Heat the peanut oil in a large frying pan or wok until very hot.
Working in small batches, add the sliced beef, don't crowd. Cook 1 minute per side, or until slightly browned and almost cooked through. Remove to a clean bowl and repeat with remaining beef.
Add the broccoli to the same frying pan along with 1 cup of water. Scrape the browned bits off the bottom of the pan and allow the broccoli to cook until just tender but still crisp. Add the water chestnuts and stir to combine.
Add the reserved beef, any accumulated juices, and the remaining marinade and stir to combine. Cook just until the sauce begins to thicken, about 30 seconds. Remove from heat and serve with steamed rice and snipped scallions, if desired.
