Having a trusty thirst quencher on hand when the summer days get warm is essential.  For the afternoon it’s a tall glass of sun tea & a splash of lemonade, but as the day turns to evening, I like kicking up the kid-friendly tea to an adults-only sipper by adding in a little rum and fresh mint.  A mojito made easy!  This recipe is so easy to make and can be kept in the fridge for a few days, if it lasts that long!  We’ve been making them every night – for testing purposes, of course.  🙂

My neighbor popped over and I made her (ok, not really “made”) take a sip and she hasn’t stopped talking about it since.  Imagine sweet refreshing tea with hints of fresh ginger, mint and rum.  It’s cold, crisp and delicious.  Did I mention it’s skinny?  The simple syrup is made using Truvia Baking Blend which has 75% less calories than white sugar.  I’m a huge fan of stevia and that’s exactly what Truvia is made from.  So skip the guilt and pour yourself a tall frosty glass of this green tea and ginger mojito on the next warm summer day.

Ingredients

  • 3 cups water
  • 3 green tea bags
  • 1 2 ” piece of ginger peeled and sliced
  • ½ cup Truvia Baking Blend
  • ½ cup water
  • fresh mint
  • rum optional

Instructions

  • In a small saucepan, add the Truvia Baking Blend and 1/2 cup water. Bring to a simmer over medium heat until the sugar is dissolved and the liquid is clear. Do not boil. Remove from heat and allow to cool slightly. Pour into a small pitcher or glass jar. Cover and refrigerate.
  • When ready to assemble, fill a glass with ice. Add a jigger of rum, 1-2 tablespoons Truvia simple syrup, fresh mint and fill glass with green tea. Stir and enjoy.

Notes

If you’d like to use regular white granulated sugar in this recipe, double the amount of Truvia used.
