A skinny sweet green tea & ginger mojito using Truvia. Easy and a summer thirst quencher.
3 cups water
3 green tea bags
1 2" piece of ginger, peeled and sliced
1/2 cup Truvia Baking Blend
1/2 cup water
In a small saucepan, bring 3 cups of water to a simmer. Turn off the heat and add the tea bags and ginger. Allow to steep for 20-30 minutes, covered. Remove tea bags and ginger and pour the tea into a small pitcher. Cover and refrigerate.
In a small saucepan, add the Truvia Baking Blend and 1/2 cup water. Bring to a simmer over medium heat until the sugar is dissolved and the liquid is clear. Do not boil. Remove from heat and allow to cool slightly. Pour into a small pitcher or glass jar. Cover and refrigerate.
When ready to assemble, fill a glass with ice. Add a jigger of rum, 1-2 tablespoons Truvia simple syrup, fresh mint and fill glass with green tea. Stir and enjoy.
If you'd like to use regular white granulated sugar in this recipe, double the amount of Truvia used.
