Can you believe it’s almost Easter?  I certainly can’t.  It feels like it should still be February.  I really wanted to bust out some sort of amazing Easter meal for you all but we are in the middle of Spring Break with the kids and the best laid plans…well you know the rest.
So today I decided I was going to go for an Easter Quickie. These “cookies” are super easy to assemble and fun to do with the kiddos.  Some nilla wafers, some chocolate and a box or 2 of peeps and that’s it.

Dark Chocolate Dipped Nilla Peeps

Dark Chocolate Dipped Nilla Peeps

A fun and easy recipe for chocolate dipped peeps sitting on Nilla Wafers.

Ingredients

  • 1 package of marshmallow Peeps
  • 10 Nilla Wafers
  • 1/2 pound dark chocolate, chopped

Instructions

  1. Place chopped chocolate in the top of a double boiler or a glass bowl set over a small pan of simmering water. Allow to melt slowly and stir only after it's almost melted.
  2. Use a small spoon and place about 1/4 teaspoon of chocolate on each of the Nilla Wafers. Press the Peep on to the chocolate and allow them to harden, about 5 minutes. Rewarm the melted chocolate if necessary. Dip each Nilla Peep into the melted chocolate and place on a parchment lined baking tray and allow to harden completely. Eat.
