If you follow me on Facebook then you probably saw my daily updates about a Juice Cleanse my husband and I started this past Monday. If you’ve ever done one, you know how insanely hard it is and I applaud you!! Yes, you feel really good in the morning and early afternoon, but nighttime is when things get a little dicey (for me at least). Anyway, we lasted for 3 days out of 10. I guess you could say we managed to make it a 1/3 of the way, or you could also say that we were big wimps and gave it up far too early. Either way – I’ll take ownership of it.
Imagine for a minute that you write a food blog (if you already do then you’ll understand right away) and you spend ALL DAY, EVERY DAY looking at food, photographing food, dreaming of food. Then one day you can no longer take that bite of the cupcake for “photography-sake” and instead have to whirl up some carrots and drink it? Now take that day and multiply it by 10. It was tough. Really tough. I got to where I wouldn’t even look at Facebook or Twitter anymore so that I wouldn’t torture myself. I became a juicing hermit. I know I know, it was only 3 days, but it felt like 100. Ok, to the point. After juicing for 3 days and eating a decent low cal/low carb dinner last night, I’ve managed to drop almost 10 lbs. I’m sure it’s a lot of water weight, but my stomach shrunk considerably and I don’t really have the sugar cravings. Miracle? Probably not. Most likely it’s a mind-shift more than Divine Intervention. So I am vowing to be better about my choices. I am vowing to lose 30+ lbs before Memorial weekend. I am vowing to post healthy recipes with a splash of the “treats” here on FG. As a food lover, I promise that what I post will NEVER be boring. No posts about “Here’s a great chicken breast with no seasoning”…never ever!! I swear. Ok, enough of this talk. Thyme Roasted Sweet Potatoes
Yield 6-8 servings
Ingredients
- 2 medium sweet potatoes, peeled & diced
- 2 medium yams, peeled & diced
- 1 1/2 tablespoons olive oil
- 5 garlic cloves, coarsely chopped
- 1 pinch of crushed red pepper flakes
- 4-6 sprigs of fresh thyme, leaves only
- salt and pepper, to taste
Instructions
- Preheat oven to 450.
- Add all ingredients to a 9x13 baking dish. Toss together. Roast for 30-35 minutes, or until the potatoes are fork tender.
