Spicy Sweet Potato Fries

If you’re anything like me, you love the convenience, and great taste of the store bought Sweet Potato Fries. Dump them on a pan and in 15-20 minutes you’ve got hot fries.  Well, if you have a few extra minutes, you can easily make them from scratch.  Seriously.  And…they taste better.  Shhhh, don’t tell anyone I said that.  Anyway, I hope you give these a shot.  They are super delicious, a little spicy and the garlic and fresh thyme make them fancy schmancy!  Oh, they also go great with these.

Spicy Sweet Potato Fries

Ingredients
4 large sweet potatoes, peeled and cut into french fry shape
2 tablespoons olive oil
4 cloves garlic, minced
1-2 pinches crushed red pepper flakes
1 teaspoon fresh thyme leaves
salt and pepper, to taste

Directions
1 Preheat the oven to 450.
2 In a large bowl, toss the sweet potatoes with the remaining ingredients.  Arrange on 2 rimmed baking sheets and bake for 20-25 minutes, or until the fries are crisp.  Serve immediately.

Makes 6-8 servings

I adore sweet potato fries, but a certain member of the family does not like them at all. So, I usually only order them out. But if they’re this easy, I may have to start making them at home! Looks great and love the spice!
