Lamb Shepherd’s Pie with Garlic Mashed Potato Crust & a Simply Potatoes Giveaway

Recently I was contacted by Simply Potatoes to do a review of their products.  I had seen the different packages of potatoes at the market, but had never bought them before.  After doing a little research on the company, it was clear that this was a product I could stand behind and feel confident in sharing with you all.  It’s fresh potatoes and all of the peeling, cleaning and such has already been done for you.  You just open the package, microwave it or heat on the stove top and you’ve got great tasting potatoes for breakfast or dinner.  Not only do they have mashed potatoes, but they also have hash browns, potatoes O’brien, potato wedges and even Macaroni and Cheese.  I know…yum!

I decided to give the Garlic Mashed Potatoes a go.  Aside from a huge plateful on Thanksgiving, can you think of a better way to enjoy mashed potatoes then adorning a Shepherd’s Pie?  Ya, me either.  Anyway, they were super easy to prepare, just a few minutes in the microwave to warm them up and they were ready to pipe onto the top of the baking dishes.  All together, this recipe will take less than 40 minutes from start to eating.  That’s the beauty of letting someone else do the peeling and preparing.

Lamb Shepherd’s Pie with Garlic Mashed Potato Crust

2 tablespoons olive oil
1 medium onion, diced
2 small carrots, diced
3/4 lb ground lamb
2 small red potatoes, small dice
1 cup red wine
1 cup beef stock
1 cup frozen peas
salt and pepper, to taste
1- 24 oz package Simply Potatoes Garlic Mashed Potatoes, heated per package directions

1 Preheat the oven to 425 degrees F.  Spray 6 – 1 cup ramekins with cooking spray and set on a baking tray.
Heat the olive oil over medium-high heat in a large skillet.  Add the onions and saute until translucent, about 4 minutes.  Add the carrots and saute about 3 minutes.  Add the lamb and saute until cooked through.  Add the potatoes, wine and beef stock and season with salt and pepper to taste.  Cook until potatoes are just tender, about 3 minutes.  Stir in the peas and divide between the 6 ramekins.
3 Add the cooked mashed potatoes to a large zip top bag, snip the bottom corner and pipe the tops of each ramekin with the mashed potatoes.  Bake for 15-20 minutes, or until the tops are golden brown and the filling is bubbling at the edges.

My husband doesn’t really love mashed potatoes, only when they are on top of shepherd’s pie. This looks great! I’ve never tried Simply Potatoes, but would love to! 🙂

Mmhm, I love love shepherd’s pie! I once lived with an Irish roomie and she made the best ever! These potatoes would just allow for more time to focus on other things!
