Caribbean Spiced Oxtail

Ok, I know I said we were through with Emeril’s Sizzling Skillets and Other One-Pot Wonders but I just had to share this last one with you.  Last night I made the Caribbean Spiced Oxtail and I have to tell you – this was probably the best dinner we’ve had in a long time.  The oxtails are tossed in spices, seared and then braised with tomatoes, onions, carrots, stock and more spices for 3 1/2 hours.  The last hour you toss in chunks of yam and the end result is absolutely amazing.  My kids were a tad skeptical about eating the tail of an ox, but they were surprised and enjoyed every bite.  Oh and the gravy – oh goodness. I’m drooling just thinking about it.

  4. I loooove oxtails. They used to be so cheap, too. Now they’re a little pricier, but I still like ’em.
