Emeril Lagasse’s Sizzling Skillets – Leek & Bacon Quiche in a Potato Crust

I wish I could express to you all just how hard it is to keep these recipes to myself.  Ask anyone, I’m a blabber mouth.  If I know it….chances are you’ll know it.  So this One-Pot Blogger Party has been killing me.  Ok, now that I have that disclaimer out of the way…..you need to go buy this cookbook.  It will be in bookstores on September 27th or you can pre-order it here or on Emeril’s website here.  You can also get more information about the book here.

I loved my 10 year old son’s comment at dinner tonight.  He said “basically this is breakfast in a pie.  It has eggs, bacon and potatoes, so it’s just like breakfast”.  He’s very right.  The leeks kick it up to another level of yum though. He went on to entertain us throughout the remainder of dinner coming up with names for dinner.  Brinner.  Brlunner.  All the while eating 2 large pieces of quiche.  I love that my kids are open-minded and will eat pretty much anything I place in front of them.  Both kids are disappointed that they will miss out on the Wok Seared Duck Salad that I’ll be making on Wednesday for the Food Editor of the Spokesman Review Newspaper.  I’ll be posting the recipe and pictorial here later on Wednesday for all of you though and I’ll be announcing the next giveaway!  Kids – Duck – Disappointed.  Hardly seems possible that they’d be bummed, but they are little foodies.

So after you buy the cookbook, make sure you dog-ear this recipe.  You will not be disappointed.  It’s excellent.

I’m making this tomorrow, but lack of springform pan will have to do and make this in a cake pan..or….cupcake pan and make mini ones? Who knwos? Yours looks awesome!
