Pear & Vanilla Bean Honey


3 ripe pears, quartered1/2 cup water1 cup white sugar1 vanilla bean, split and seeds scraped1 tbsp lemon juice


In a medium sized pot, add the pears and water.  Bring to a boil and then turn down and simmer for 15 minutes, or until the pears are very soft.Pass the pears and cooking liquid through a food mill.  Add to a clean pot along with the sugar, vanilla bean seeds and pod, and lemon juice.  Bring to a boil and cook, stirring occasionally, for 20-25 minutes, or until the mixture begins to get a golden honey color.  Remove from the heat and let cool, stirring occasionally.  Refrigerate in 2 - 1/2 pint jars or in 1 pint jar.
