Surprise Blondie Buttons

So the other day I was blabbing away with my Twitter friends, well one in particular named Barbara.  She has an unbelievable blog at http://www.vinolucistyle.com, you should pay her a visit but make sure you have something to wipe the drool.  Her recipes are amazing!!  Anyway, she and I were bantering back and forth about the amazingness of Rolo’s and trying to figure out what we could do with them besides just inhaling the package.

Later that night I found myself in the candy isle at the supermarket staring down the box of Rolo’s.  Buy them or not.  Of course I had to.  They were buy 2 get 2 free.  Duh!  I was nice, though, and gave 2 of the candies to my son.  Ok, so after snarfing one whole package of them I decided to hide the second one.  It wasn’t until today I figured I’d better bake with them before the midnight cravings hit and I devoured it.  I kept visualizing them snug in a blondie.  They definitely don’t need to compete with more chocolate so blondies were the perfect capsule.  The end result – perfect bites of brownie and candy that had the family peeps swarming around me like angry bees!

I promise you won’t be disappointed and will give you one tidbit of advice.

Make them when you’re home alone.  🙂

Surprise Blondie Buttons
{Printable Recipe}


8 tbsp butter, melted
1 cup light brown sugar, packed
1 egg
1 1/2  tsp vanilla
Pinch salt
1 cup all purpose flour
3 packages Rolo candies

1) Preheat oven to 350.  Butter a mini muffin pan, or not if using a silicone pan.
2) Melt butter in a small saucepan.
3) Beat the butter and brown sugar until smooth with a hand mixer.  Beat in the egg, vanilla and salt.  Stir in the flour until just combined.
4) Using a small hinged scooper fill the prepared muffin cups 3/4 full.  Press a Rolo candy into the center of each.  Bake for 20 minutes or 17 if you like your brownies more on the gooey side.

You girls are funny! Believe me, I popped a couple in my mouth! Rolos I mean. HA! They kids have officially inhaled them all! All that’s left is one blondie that didn’t get any Rolo Love! Guess that’s my mid morning snack.

See how you are…not only taking the proverbial ball and running with it…but well, now making my slacker ways even more evident. My effort was however much easier than yours, neiner niener…I just ate the dumb Rolos right out of the package!

Now of course I am even more determined than ever; they sure do look good all melty.
