Applesauce Pancakes with Cinnamon & Bananas

Do you ever buy a jar of applesauce at the market and think “I’ll use this up, no problem” only to find it in the back of the fridge looking like it needs to be donated to science?  Ya, me too.  This time, I’m vowing to use up the entire jar before that happens.  So if you’re sick of applesauce recipes – I am truly sorry.  Or maybe you’re secretly thanking me since you may be in the same “applesauce dilemma” as I am.  Whichever it is, you need to make these pancakes (or the Applesauce Chocolate Chip Cookies if you haven’t already).  Not only are they healthy for you with the addition of wheat germ and whole wheat flour, but they are fluffy and delish.  I cheated  for the little people and omitted the bananas and added chocolate chips.  They don’t notice the whole wheat as much if they’re focusing on chocolate. Give them a shot!

In a batter bowl add 1 1/4 cups of All Purpose Flour, 1 cup of Whole Wheat flour, 1 tablespoon of Wheat Germ, 1 1/2 tablespoons of Baking Powder and a 1/2 teaspoon of Cinnamon and whisk it together.
Whisk up 3 egg whites until frothy and pour into the dry mixture – no need to stir yet.
Add 1 1/8 cups of applesauce to the dry mixture and egg whites – still no stirring.
Add 1 1/2 cups of milk to the bowl and MIX.  Don’t go crazy, just stir until all of the flour has been incorporated.
Get your griddle good and hot and scoop up your batter with a measuring cup.  Add the goodies of your choice.  These were for the little people who were protesting eating bananas in their pancakes (even though they love bananas – go figure).
Look how gorgeous!  
Now for the adult pancakes.  Notice there are few on the griddle?  🙂  
Even though I’m stuffed, I could seriously eat that right now!  
Applesauce Pancakes with Cinnamon & Bananas
{Printable Recipe}

1 1/4 c all-purpose flour
1 c whole wheat flour
1 tbsp wheat germ
1 1/2 tablespoons baking powder
1/2 tsp cinnamon
1 1/8 c applesauce (unsweetened)
3 egg whites, lightly beaten until frothy
1 1/2 c milk (I used fat free)
2 ripe bananas (or other mix ins)
1) Mix dry ingredients in a batter bowl with a whisk until incorporated well.
2) Add the applesauce, egg whites and milk and stir until the dry ingredients are incorporated.
3) Preheat your griddle and using a 1/4 cup measure, pour the batter onto the hot griddle.  Top with sliced bananas and cook until the bottoms are golden and then flip.
4) Serve with maple syrup and enjoy!
