Alright, so I’m back on the band-wagon for getting in shape and eating healthy. So out come the recipes that I know are not laden in fat and carbs! This one, although it has corn tortillas, is pretty good for you and if you take a smaller portion and add a big side salad, you’ll be just fine. I hope you enjoy it.

20 medium shrimp, deveined and tails removed
1 medium onion, chopped
1 medium red pepper, chopped
