Happy Labor Day!

Do you ever really think about the holidays we celebrate?  I mean, more than just “Woohoo it’s a 3 day weekend”?  Well here’s a little blip about Labor Day and why it’s a national holiday.  Then when you’re done reading, take a gander at my Caramel Apple Pie recipe below.  Oh yes – I couldn’t post serious stuff without including a mouth watering recipe!  Mmm hmm  Good stuff!

Labor Day is a United States federal holiday observed on the first Monday in September (September 6 in 2010).
The first Labor Day in the United States was observed on September 5, 1882 in New York City, by the Central Labor Union of New York, the nation’s first integrated major trade union. It became a federal holiday in 1894, when, following the deaths of a number of workers at the hands of the U.S. military and U.S. Marshals during the Pullman Strike, President Grover Cleveland put reconciliation with the labor movement as a top political priority. Fearing further conflict, legislation making Labor Day a national holiday was rushed through Congress unanimously and signed into law a mere six days after the end of the strike. The September date originally chosen by the CLU of NY and observed by many of the nation’s trade unions for the past several years was selected rather than the more widespread International Workers’ Day because Cleveland was concerned that observance of the latter would stir up negative emotions linked to the Haymarket Affair, for which it had been observed to commemorate. All 50 U.S. states have made Labor Day a state holiday.
The form for the celebration of Labor Day was outlined in the first proposal of the holiday: A street parade to exhibit to the public “the strength and esprit de corps of the trade and labor organizations,” followed by a festival for the workers and their families. This became the pattern for Labor Day celebrations. 
Traditionally, Labor Day is celebrated by most Americans as the symbolic end of the summer. The holiday is often regarded as a day of rest and parties.  Forms of celebration include picnics, barbecues, fireworks displays, water sports, and public art events.

Caramel Apple Lattice Pie



  • 1 recipe pastry for a 9 inch double crust pie
  • 1/2 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/4 cup water
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 8 Granny Smith apples – peeled, cored and sliced
  • 1 1/2 tsp ground cinnamon

Directions

  1. Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer (don’t let it burn).
  2. Place the bottom crust in your pan. Toss apples in a large bowl with the cinnamon and then fill the pie crust with apples, mounded slightly. Cover with a lattice crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  3. Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

Nah, it just tasted like apple pie, but the caramel sauce was a unique twist to the typical apples spiced with sugar & cinnamon. It made the crust have a beautiful golden sheen. Super yummy (just needed to cook longer)

The apple pie was great! If you make it, I would recommend extending the cooking time by 15 minutes. The apples were a little too al dente for my taste. I like to cut effortlessly through them, not saw them! 🙂
