A friend was asking about what to make with Feta Cheese so I figured I’d help her out! This recipe is one that I use on a regular basis. Not only is it fast, but relatively healthy for you as well! Note that it’s only 2 servings so you may want to double it.
Basil Shrimp with Feta & Orzo
1 regular sized foil oven bag (or make your own envelope with foil)
1/2 cup uncooked orzo
2 tsp olive oil, divided
1 cup tomato, diced
3/4 cup green onions, sliced
1/2 cup feta cheese (about 2 ounces)
1/2 tsp lemon rind, grated
1 tbsp lemon juice
1/4 tsp salt
1/4 tsp pepper
3/4 lb shrimp (uncooked, shelled, tales off)
1/4 cup basil, chopped
1) preheat oven to 450. coat inside of oven bag with cooking spray, place on a baking sheet and set aside.
2) cook the pasta in boiling water for 5 minutes and drain. place pasta and next 7 ingredients in a large bowl & toss. place in oven bag.
3) toss shrimp and basil and arrange on orzo. Seal the oven bag and bake for 20-25 minutes.
4) drizzle with remaining 1 tsp of olive oil and serve!
