…..or is it? According to the weather man, there’s warm weather on the horizon, but this winter has completely jaded me! My new saying…I’ll believe it when I see it! So come on Mother Nature, let’s see it! We’ve all had enough of this!
On a lighter note, my 8 new baby chicks are not so “baby” anymore. They have all grown like little weeds and are now out in the coop with the big girls. They’re all still leery of each other, but that will soon come to pass.
Ok….recipe time. Tonight I was scouring the internet for “something” to make for dinner. This one is a great comfort food kinda dinner. I served it with steamed broccoli and it was quite satisfying. I hope you enjoy it too. This recipe was adapted from www.allrecipes.com.
Incredibly Easy Chicken & Noodles
1 small onion, diced
3 cloves garlic, minced
1 (26 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
3 (14.5 ounce) cans chicken broth
2 cups diced, cooked chicken breast meat
Salt & Pepper, to taste
Pinch of crushed red pepper flakes (optional)
2 (9 ounce) packages frozen egg noodles (I used dried spinach noodles)
In a large pot, saute the onion in a small amount of olive oil or cooking spray until translucent. Add garlic and cook for 30 seconds. Mix the cream of chicken soup, cream of mushroom soup, chicken broth, and chicken meat. Season with salt & pepper. Bring to a boil, and stir in the noodles. Reduce heat to low, and simmer for 20 to 30 minutes.
