Buffalo Chicken Sliders

My Husband and I decided (again) that it’s time to shed a few pounds.  All of the indulgences of Thanksgiving and the Holidays in general make us both feel a little…you know, chubby.  So, we’ve joined the local gym and have vowed to stick to it.  As part of the “plan”, I am trying to be mindful about what I’m making us for dinner as well.  Don’t get me wrong, most of what I make is relatively decent in the calorie department, it’s the other goodies that add the extra chub.

This little blog of mine is an interesting animal.  Most people don’t want to see a heaping pile of lettuce, even if you manage to photograph it in its best light.  Having a website is all about getting eyeballs to look at what you’re posting.  Eyeballs don’t like heaping piles of lettuce or Tilapia in Hobo Pouches, for some crazy reason.  Go figure!  So, as the pleaser I am, I  try to give my readers something that will make their mouth water and they will have the uncontrollable urge to click the [print] button below and hurry off to make whatever it is I’ve conjured up.  That’s the goal!

Enter these Buffalo Chicken Sliders.  The large amount of mayo was for picture purpose only, so don’t do that, but other than that, these sliders are really tasty and not so bad in the calorie department.  According to CalorieCount.com, if you made these into a regular 1/4 lb burger on a 100% Whole Wheat bun, you’d be looking at 430 calories.  Remove the blue cheese and you’re down to 380.  Making them as sliders will subtract some calories if you promise to only eat one.  My family really enjoyed them a lot.  I served them with homemade Spicy Sweet Potato Fries (recipe tomorrow).  Easy, somewhat guilt-free and packed with flavor.  Give them a try!

Buffalo Chicken Sliders

Ingredients
1 pound ground chicken (or turkey)
1/2 teaspoon celery seed
2 egg whites, lightly beaten
2 ounces blue cheese, crumbled
1/2 cup panko bread crumbs (or other breadcrumbs)
2 oz Frank’s RedHot Hot Sauce – Original
salt and pepper, to taste
6-8 Whole Wheat Slider Buns (or 4 regular hamburger buns)
Lettuce, Tomato or other toppings

Directions
1 In a medium bowl add the chicken, celery seed, egg whites, blue cheese, panko, hot sauce and salt and pepper.  Mix well to combine.  Form into patties the size of your slider buns.

2 Heat a grill pan or other frying pan over medium-high heat.  Spray generously with cooking spray.  Grill the burgers about 3-4 minutes per side, pressing down slightly.  Remove and repeat with any remaining, if necessary.  Serve on toasted slider buns with your choice of condiments.

Makes 6-8 Sliders or 4 Regular Sized Hamburgers

    These look so good I might eat them even though I don’t eat chicken (because I love our pet ones too much). My husband says sliders are “nature’s perfect food” LOL.

  10. LOL, I don’t mind a heaping pile of lettuce, if it has the right toppings on it. Preferrably bacon! 😉 But the sliders look great too.
