One Bowl Banana Bread

Lately I have been running like a chicken with my head chopped off.  Pretty visual, I know.  So not much has been getting cranked out of my kitchen lately.  That needs to change, pronto!  In one of my “dash to the grocery store to pick up stuff” moments, I grabbed a bunch of bananas not realizing that there were already a bunch sitting on the kitchen counter.  Oops.  When life hands you bananas….oh you already know what I’m going to say.  Anyway, I decided to make some Banana Bread.  This recipe is incredibly easy.  One bowl…that’s it.  Just put all of the ingredients in, give it a good stir to incorporate and then you’re off to the races.  This bread is a little more dense than recipes where you cream the butter and a lot more banana-y (is that a word) than ones that call for only 2 or 3, but it’s still a really great bread and you can’t beat the ease.  I would offer a pictorial here, but…..why?  The end product is far more interesting than a shot of my bowl with the ingredients.  Right?  Enjoy!
 

One Bowl Banana Bread

Ingredients
4 ripe bananas
1/4 cup melted butter
1 egg
1/2 cup Splenda (or 3/4 cup white sugar)
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt

Instructions

  1. Preheat oven to 350.  Butter a loaf pan and set aside.
  2. In a large bowl add ALL ingredients.  Using a wooden spoon, beat to just combine.  Pour into prepared loaf pan.
  3. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.  Cool for 20 minutes and then remove from the loaf pan and cool on a rack.

How’s that for easy?  1 bowl of banana bread love.

    I’m saving this one, I always end up with ripe bananas and usually more than 2 which seems to be the standard for most recipes. Looks delicious and I think banana-y is a word in my kitchen!

This is kinda like my “tried & true” recipe I learned as a kid – every year I’d mix up 10 or 12 items for the county fair “under 14” division (I loved ribbons!) and would ALWAYS win a red ribbon for my banana bread! Never, as hard as I tried, could I get a blue for the banana bread….. oh well, red’s my favorite color anyway …. and I DID earn blues & Grand Champs for some of my other goodies!
