Pumpkin Muffins

This was the first attempt and taking a decadent recipe and making it lower in fat.  The verdict?  Pretty good, but not knock your cowgirl boots off great.  With that said, they are still quite tasty and much better for you with the omission of butter and addition of unsweetened applesauce.  If you plan to make them as is, I would suggest spraying your muffin tin with cooking spray instead of using muffin papers.  No oil or fat equals sticking to the paper.  Here’s the recipe for your enjoyment.

Slimmed Down Pumpkin Muffins

1 1/2 c all purpose flour
1/2 c whole wheat flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 c brown sugar, packed
1/4 c white sugar
1 15 oz can pumpkin puree
2 large eggs
1/2 c milk, fat free
1/3 c unsweetened applesauce
1 tsp vanilla
1/2 c nuts, chocolate chips or raisins or a mix of all.

1) Preheat the oven to 375.  Line 2 muffin tins with papers or spray with cooking spray (recommended)
2) Mix all dry ingredients in a bowl with a whisk.  Set aside.
3) Mix all wet ingredients in another bowl with a whisk.  Stir into the flour mixture just until incorporated.
4) Bake for 20-25 minutes or until a toothpick inserted comes out clean.
