Banana Crumb Muffins

Sometimes it’s nice to make muffins instead of bread. One great reason is portion control! I find if I bake a loaf of bread that I have a very hard time eating just one slice! I’m sure I’m not alone. So muffins are a much easier way to stop yourself from overindulging! The below is a great recipe for banana muffins that are very moist and delicious. The crumb topping makes the muffins extra delicious. I hope you enjoy!

Farmgirl Banana Crumb Muffins

1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
3/4 cup white sugar
1 large egg, lightly beaten
1/3 cup butter, melted
1 tsp vanilla
3 ripe bananas, mashed

topping
1/3 cup packed brown sugar
1 tsp cinnamon
2 tbsp flour
1 tbsp butter

1) preheat oven to 375. line muffin tin with muffin papers or spray with cooking spray.
2) mix flour, baking soda, baking powder, salt & cinnamon in a bowl. set aside.
3) whisk together the egg and sugar, add butter, vanilla & mashed bananas.
4) add wet mixture to the dry ingredients and stir until just combined. spoon into muffin tin.
5) for the topping: mix all ingredients in a small bowl until it looks like coarse meal. sprinkle on the muffins.
6) bake for 18-20 minutes, or until a toothpick comes out clean.
